Function of fats:
- energy storage
- important for hormone production
- necessary for dissolving vitamins (fat-soluble – A, D, E, K)
- anti-inflammatory effect
Fat reserves (80kg lean man, 10-15% fat) represent 8-12kg, ie about 100000 kCal, which is about 50 times more energy than stored in glycogen.
Dietary fats are divided into:
- animal fats (dairy products, fat of animals, yolk – solid at room temperature)
- plant fats (vegetable oil) – liquid, excluding coconut oil
But more important is the division in terms of the chemical properties of fatty acids:
- Saturated Fats (SFA / SAFA, especially animal, but also in some plants)
- Monounsaturated Fats (MUFA)
- Polyunsaturated Fats (PUFA)
- Trans Fats (unsaturated fats with trans geometry)
