Function of fats:

  • energy storage
  • important for hormone production
  • necessary for dissolving vitamins (fat-soluble – A, D, E, K)
  • anti-inflammatory effect

Fat reserves (80kg lean man, 10-15% fat) represent 8-12kg, ie about 100000 kCal, which is about 50 times more energy than stored in glycogen.

Dietary fats are divided into:

  • animal fats (dairy products, fat of animals, yolk – solid at room temperature)
  • plant fats (vegetable oil) – liquid, excluding coconut oil

But more important is the division in terms of the chemical properties of fatty acids:
